Rasam

 Rasam is a popular South Indian soup that is typically tangy and spicy. It is made with a base of tamarind juice, tomatoes, and a blend of aromatic spices. Here's a recipe to prepare rasam:



Ingredients:

  • 1 small lemon-sized ball of tamarind
  • 2 ripe tomatoes, chopped
  • 1 teaspoon of rasam powder (a blend of spices available in Indian stores)
  • ½ teaspoon of turmeric powder
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of black pepper
  • A pinch of asafoetida (hing)
  • A few curry leaves
  • 2 tablespoons of ghee or oil
  • 1 teaspoon of mustard seeds
  • Salt to taste
  • Chopped cilantro for garnishing

For the spice paste (optional):

  • 1 teaspoon of coriander seeds
  • ½ teaspoon of cumin seeds
  • 3-4 dried red chilies
  • 2 garlic cloves

Instructions:

  1. Soak the tamarind in warm water for about 15 minutes. Squeeze and extract the juice, discarding any solids.

  2. If using the spice paste, dry roast coriander seeds, cumin seeds, dried red chilies, and garlic cloves in a pan until aromatic. Grind them into a fine paste using a mortar and pestle or a spice grinder. Set aside.

  3. In a large pot, add the tamarind juice, chopped tomatoes, rasam powder, turmeric powder, cumin seeds, black pepper, asafoetida, and curry leaves. Add the spice paste if using. Add salt to taste and bring the mixture to a boil.

  4. Reduce the heat to medium-low and let the rasam simmer for about 10-15 minutes to allow the flavors to meld together.

  5. In a separate small pan, heat ghee or oil. Add mustard seeds and let them splutter. Then, add the tempering to the rasam and stir well.

  6. Remove the rasam from heat and garnish with chopped cilantro.

  7. Serve the rasam hot as a soup or along with steamed rice and a side dish like papad or potato fry.

Note: Rasam can be customized according to personal preferences. Some people prefer it spicier, while others prefer it milder. Adjust the spices and seasoning accordingly. You can also add cooked lentils to make it thicker and more filling. Enjoy the comforting flavors of homemade rasam!
