Ingredients:


➤2 cups grated carrots (about 4-5 medium-sized carrots)

➤1 cup full-fat milk

➤1 cup sugar

➤2 tablespoons ghee (clarified butter)

➤1/2 teaspoon cardamom powder

➤A pinch of saffron strands (optional)

➤Chopped nuts (such as almonds or pistachios) for garnish

➤Ghee for greasing the plate



Instructions:


1. Grate the carrots:

➤Wash, peel, and grate the carrots finely. Set them aside.


2. Cook the carrots:

➤In a heavy-bottomed pan, heat 2 tablespoons of ghee over medium heat.

➤Add the grated carrots and sauté them in the ghee for 7-8 minutes, stirring occasionally, until they         become soft and release their moisture.


3. Add milk:

➤Pour in the milk and stir. Continue to cook the mixture over medium heat while stirring occasionally.      The carrots will absorb the milk and start thickening.


4. Add sugar:

➤When the mixture has thickened, add the sugar and mix well.


5. Cook until it thickens:

➤Continue to cook the mixture over medium-low heat, stirring frequently. The mixture will start to             thicken, and the sugar will dissolve. This may take about 20-30 minutes.


6. Flavor with cardamom and saffron:

➤Add cardamom powder and saffron strands (if using) to the mixture and mix well. The saffron will        impart a lovely color and aroma to the barfi.


7. Cook until it leaves the sides:

➤Keep stirring and cooking until the mixture thickens further and starts to leave the sides of the pan.       This means it's ready to be set.


8. Set the barfi:

➤Grease a plate or a tray with ghee. Transfer the carrot mixture to the plate and spread it evenly.


9. Garnish:

➤Sprinkle the chopped nuts over the top of the carrot mixture and press them gently with the back of a      spoon.


10. Cool and cut:

➤Allow the carrot barfi to cool to room temperature. Once it has cooled, you can cut it into square or       diamond-shaped pieces.


11. Serve:

➤Your carrot barfi is ready to be enjoyed. Store any leftover pieces in an airtight container.
