Beetroot Sabzi | Dry Beetroot Curry recipe
Ingredients:
➤2 cups grated beetroot
➤1 tablespoon oil
➤1 teaspoon mustard seeds
➤1 teaspoon cumin seeds
➤1/2 teaspoon asafoetida (hing)
➤1 teaspoon turmeric powder
➤1 teaspoon red chili powder (adjust to taste)
➤1 teaspoon coriander powder
➤Salt to taste
➤1 tablespoon grated ginger
➤2 tablespoons chopped coriander leaves for garnish (optional)
Instructions:
1. Prepare the Beetroot:
a. Peel and grate the beetroot. Set aside.
2. Cook the Beetroot:
a. Heat oil in a pan over medium heat.
b. Add mustard seeds and let them splutter.
c. Add cumin seeds and asafoetida (hing).
d. Add grated ginger and sauté for a minute until the raw smell disappears.
e. Add the grated beetroot to the pan and mix well.
f. Add turmeric powder, red chili powder, coriander powder, and salt. Mix until the spices are well combined with the beetroot.
g. Cook the beetroot on medium heat, stirring occasionally. Cover the pan to help the beetroot cook faster. Cook until the beetroot is tender yet retains a slight crunch. This may take about 10-15 minutes.
3. Garnish and Serve:
a. Once the beetroot is cooked, garnish the sabzi with chopped coriander leaves if desired.
b. Remove from heat and transfer the beetroot sabzi to a serving dish.
4. Serve:
a. Beetroot sabzi can be served as a side dish with roti, paratha, or rice.
