 Veg Sagu is a popular South Indian side dish that is typically served with dishes like dosa, idli, chapati, and poori. It's a flavorful and aromatic mixed vegetable curry. Here's a recipe for making Veg Sagu:

Ingredients:


For the Sagu Paste:

➤1/2 cup grated coconut

➤1/4 cup roasted chana dal (split chickpeas)

➤1-2 green chilies (adjust to your spice preference)

➤1-inch piece of ginger

➤2-3 cloves of garlic

➤A small bunch of fresh coriander leaves

➤1/4 cup water (for blending)


For the Sagu:

➤2 tablespoons oil

➤1 teaspoon mustard seeds

➤1 teaspoon cumin seeds

➤1 onion, finely chopped

➤2-3 green chilies (adjust to your spice preference)

➤1/2 cup mixed vegetables (carrots, beans, peas, potatoes, etc.)

➤1/2 cup chopped beans

➤1/2 cup chopped capsicum (bell pepper)

➤1/2 cup chopped cauliflower

➤1/2 cup chopped carrots

➤1/2 cup chopped peas

➤1/2 teaspoon turmeric powder

➤Salt to taste

➤1/2 cup water

➤1/2 cup yogurt (curd)

➤Fresh coriander leaves, chopped, for garnish



Instructions:


For the Sagu Paste:

1. In a blender, combine grated coconut, roasted chana dal, green chilies, ginger, garlic, and fresh                coriander leaves.

2. Add 1/4 cup of water and blend to a smooth paste. Set aside.


For the Sagu:

1. Heat oil in a large pan or skillet over medium heat. Add mustard seeds and let them splutter.

2. Add cumin seeds and sauté for a few seconds until they release their aroma.

3. Add finely chopped onions and green chilies. Sauté until the onions become soft and translucent.

4. Add the mixed vegetables (carrots, beans, peas, potatoes) and sauté for a few minutes.

5. Add the chopped beans, capsicum, cauliflower, carrots, and peas. Stir to combine.

6. Sprinkle turmeric powder and salt. Mix well and cook for a couple of minutes.

7. Pour in 1/2 cup of water and bring the mixture to a boil. Cover the pan and let the vegetables cook           until they are tender.

8. Once the vegetables are cooked, add the prepared Sagu paste and mix well.

9. Stir in yogurt (curd) and cook for a few more minutes, ensuring the yogurt is well incorporated.

10. Garnish with fresh coriander leaves.

11. Serve Veg Sagu with dosa, idli, chapati, poori, or rice.
