 Veg Shakuti is a delicious and flavorful Goan dish that combines a variety of vegetables with a rich and spicy coconut-based gravy. Here's a recipe for Veg Shakuti:

Ingredients:


For the Gravy:

➤1 cup grated fresh coconut

➤1 small onion, chopped

➤6-8 dried red chilies (adjust to your spice preference)

➤6-8 peppercorns

➤1-inch piece of cinnamon

➤4-5 cloves

➤2-3 green cardamom pods

➤6-8 garlic cloves

➤1-inch piece of ginger

➤1 teaspoon coriander seeds

➤1/2 teaspoon cumin seeds

➤1/2 teaspoon turmeric powder

➤Water, as needed


For the Vegetables:

➤2 cups of mixed vegetables (e.g., carrots, beans, peas, bell peppers, and potatoes), chopped

➤1 small onion, finely chopped

➤1 small tomato, finely chopped

➤1/2 cup of tamarind pulp (soak tamarind in warm water and extract the pulp)

➤1 tablespoon oil

➤Salt to taste


For Tempering:

➤1 tablespoon oil

➤1/2 teaspoon mustard seeds

➤1/2 teaspoon cumin seeds

➤A few curry leaves


Instructions:


1.  Prepare the Gravy:

a. Heat a pan over low heat and roast the dried red chilies, coriander seeds, cumin seeds, peppercorns,        cinnamon, cloves, and cardamom until fragrant. Keep them aside.

b. In the same pan, add a little oil and sauté the chopped onion until it turns translucent.

c. Add the grated coconut and roast it until it turns golden brown.

d. Transfer the roasted spices, onion, and coconut to a blender. Add garlic, ginger, turmeric powder, and       some water. Blend into a smooth paste. Set aside.


2.  Cook the Vegetables:

a. Heat oil in a large pan or pot. Add the chopped onion and sauté until it becomes soft and translucent.

b. Add the chopped vegetables and sauté for a few minutes.

c. Add the chopped tomato, tamarind pulp, and salt. Mix well.


3.  Add the prepared gravy to the vegetables and mix everything together. Cook for a few more minutes     until the vegetables are tender and the flavors are well incorporated.


4.  Prepare the Tempering:

a. In a separate small pan, heat oil for tempering.

b. Add mustard seeds, cumin seeds, and curry leaves. Let them splutter.


5. Pour the tempering over the Veg Shakuti, mix well, and cook for another couple of minutes.


6. Serve hot with steamed rice or Indian bread like chapati or paratha.
