Ingredients:

For Misal (Spicy Lentil Curry):

Sprouted Lentils (Usal):


➤1 cup moth beans (matki) sprouts

➤1/2 cup green gram (moong) sprouts

➤1/2 cup black gram (udad) sprouts

➤1/2 cup boiled and mashed potatoes

➤1 large onion, finely chopped

➤1 large tomato, finely chopped

➤2-3 green chilies, finely chopped

➤1/4 cup chopped cilantro (coriander leaves)

➤1/4 cup grated coconut (optional)

➤1 tablespoon oil

➤1 teaspoon mustard seeds

➤1 teaspoon cumin seeds

➤A pinch of asafoetida (hing)

➤1/2 teaspoon turmeric powder

➤1 tablespoon Misal Pav masala (store-bought or homemade)

➤Salt to taste

➤Water as needed


For Garnish:


➤Chopped onions

➤Finely chopped cilantro

➤Sev (crispy chickpea flour noodles)

➤Lemon wedges


For Pav:

➤Pav (soft bread rolls)

➤Butter for toasting



Instructions:

For Misal (Spicy Lentil Curry):

1. Sprout Lentils:

➤Sprout moth beans, green gram, and black gram by soaking them overnight and letting them sprout         for a day or two.


2. Prepare Misal:

➤Heat oil in a pan. Add mustard seeds, cumin seeds, and asafoetida. Once they splutter, add chopped        onions and green chilies. Sauté until onions turn golden brown.


3. Add Tomatoes:

➤Add chopped tomatoes and cook until they become soft and mushy.


4. Add Spices:

➤Add turmeric powder, Misal Pav masala, and salt. Mix well.


5. Cook Sprouts:

➤Add the sprouted lentils and boiled mashed potatoes. Mix and cook for a few minutes.


6. Add Water:

➤Add enough water to achieve the desired consistency. Simmer and let it cook for about 15-20                   minutes  until the flavors blend well.


7. Garnish:

➤Garnish with chopped cilantro and grated coconut.


For Pav:

1. Toast Pav:

➤Slice the pav horizontally. Toast them with a little butter on a griddle until they are golden brown.


Serving:

1. Serve Misal:

➤Ladle the hot misal into a bowl.


2. Garnish:

➤Garnish with chopped onions, sev, and additional cilantro.


3. Serve with Pav:

➤Serve Misal Pav hot with the toasted pav and lemon wedges on the side.
