Puran Poli is a popular sweet flatbread in India, especially during festivals like Holi and Diwali. It is made with a stuffing of sweetened chana dal (split Bengal gram) or yellow gram and is usually served with ghee. Here's a basic recipe for making Puran Poli:

Ingredients:

For the Puran (Stuffing):

➤1 cup chana dal (split Bengal gram)

➤1 cup jaggery, grated

➤1/2 tsp cardamom powder

➤A pinch of nutmeg powder

➤Ghee (clarified butter) for greasing


For the Poli (Flatbread):

➤2 cups whole wheat flour

➤A pinch of salt

➤Water for kneading

➤Ghee for cooking


Instructions:

Preparing the Puran (Stuffing):

1. Rinse and Cook Dal:

➤Rinse the chana dal thoroughly and pressure cook it with enough water until it becomes soft and            mushy. Drain any excess water.


2. Prepare Jaggery Syrup:

➤In a pan, melt the grated jaggery with a little water to make a syrup. Strain to remove impurities.


3. Combine Dal and Jaggery Syrup:

➤Add the cooked chana dal to the jaggery syrup and cook on low flame. Stir continuously until the            mixture thickens.


4. Add Flavorings:

➤Add cardamom powder and nutmeg powder to the dal-jaggery mixture. Continue cooking until the        mixture forms a thick consistency. This is your puran.


5. Cool the Puran:

➤Allow the puran to cool completely. Once cool, you can either blend it or mash it to make a smooth        consistency.


Making the Poli (Flatbread):

1. Prepare Dough:

➤In a mixing bowl, combine whole wheat flour and a pinch of salt. Add water gradually to knead the       dough. The consistency should be soft but not sticky.


2. Divide into Balls:

➤Divide the dough into small lemon-sized balls. Similarly, divide the puran into balls.


3. Rolling and Stuffing:

➤Take a dough ball, flatten it, and place a puran ball in the center. Enclose the puran with the dough,         ensuring there are no cracks.


4. Rolling Out the Poli:

➤Roll out the stuffed ball gently into a flat, round shape using a rolling pin. Be careful not to break the      outer layer.


5. Cooking:

➤Heat a griddle or a flat pan. Place the rolled puran poli on it and cook on both sides using ghee until        golden brown spots appear.


6. Serve:

➤Serve Puran Poli hot with ghee or milk.
