Ingredients:


For Rice:


➤1 cup Basmati rice

➤2 cups water

➤1/2 teaspoon salt


For Brinji Masala:


➤1 large onion, thinly sliced

➤1 large tomato, chopped

➤1/4 cup mixed vegetables (carrots, peas, beans)

➤1/4 cup coconut milk

➤1/4 cup yogurt

➤1/4 cup mint leaves

➤1/4 cup coriander leaves

➤2 green chilies, chopped

➤1-inch ginger, grated

➤4-5 cloves garlic, minced

➤1/2 teaspoon turmeric powder

➤1 teaspoon red chili powder

➤1 teaspoon garam masala

➤1/2 teaspoon cumin seeds

➤2 tablespoons ghee or oil

➤Salt to taste



Instructions:


1. Cooking Rice:

➤Rinse the basmati rice in cold water until the water runs clear.

➤In a pot, bring 2 cups of water to a boil.

➤Add the rinsed rice and salt to the boiling water.

➤Cook the rice until it's 70-80% done. It should have a slight bite to it.

➤Drain excess water and set aside.


2. Preparing Brinji Masala:

➤Heat ghee or oil in a pan. Add cumin seeds and let them splutter.

➤Add sliced onions and sauté until golden brown.

➤Add grated ginger and minced garlic, sauté for a minute until the raw smell disappears.

➤Add chopped tomatoes and cook until they are soft and the oil separates.

➤Add chopped mixed vegetables and cook for a few minutes until they are slightly tender.

➤Stir in turmeric powder, red chili powder, and salt.

➤Add coconut milk and yogurt, mix well, and let it simmer for a couple of minutes.

➤Add mint leaves, coriander leaves, green chilies, and garam masala. Mix well.


3. Assembling Brinji Rice:

➤Add the partially cooked rice to the masala mixture.

➤Gently mix the rice and masala without breaking the rice grains.

➤Cover the pot with a tight-fitting lid and cook on low heat for about 15-20 minutes or until the rice is       fully cooked and absorbs the flavors.

➤You can also place a tawa (griddle) under the pot to prevent burning.


4. Serve:

➤Once done, fluff the rice with a fork.

➤Garnish with fresh coriander leaves and serve hot.
