Ingredients:


For Kadhi:


➤1 cup gram flour (besan)

➤2 cups yogurt (curd), beaten

➤4 cups water

➤1 onion, finely chopped

➤1/2 cup chopped mixed vegetables (optional)

➤1 teaspoon ginger, grated

➤1 teaspoon garlic, minced

➤1/2 teaspoon turmeric powder

➤1 teaspoon red chili powder

➤Salt to taste


For Pakoras:


➤1 cup gram flour (besan)

➤1 onion, finely chopped

➤1/2 teaspoon red chili powder

➤Salt to taste

➤Water (as needed for batter)

➤Oil for deep frying


For Tempering (Tadka):


➤2 tablespoons ghee or oil

➤1 teaspoon mustard seeds

➤1 teaspoon cumin seeds

➤2-3 dried red chilies

➤1/2 teaspoon fenugreek seeds (methi)

➤A pinch of asafoetida (hing)

➤Curry leaves (optional)


For Garnish:

➤Fresh coriander leaves, chopped



Instructions:


For Pakoras:

1. In a bowl, mix gram flour, chopped onions, red chili powder, and salt.

2. Add water gradually to form a thick batter.

3. Heat oil for deep frying. Drop spoonfuls of batter into the hot oil and fry until golden brown.                  Remove  and set aside.


For Kadhi:

1. In a mixing bowl, whisk together gram flour and beaten yogurt until smooth.

2. Add water gradually, stirring continuously to avoid lumps.

3. Heat 2 tablespoons of ghee or oil in a large pot. Add mustard seeds, cumin seeds, dried red chilies,          fenugreek seeds, asafoetida, and curry leaves. Let them splutter.

4. Add chopped onions, ginger, and garlic. Sauté until the onions are golden brown.

5. Pour the gram flour and yogurt mixture into the pot. Add turmeric powder, red chili powder, and salt.       Mix well.

6. Add chopped mixed vegetables if using. Let the kadhi simmer on low heat for about 30-40 minutes,         stirring occasionally.


Assembly:

1. Once the kadhi has cooked and thickened, add the fried pakoras. Let it simmer for an additional 10-          15 minutes.

2. Garnish with fresh coriander leaves.

Serve hot Kadhi Pakora with steamed rice or chapati. The combination of tangy kadhi and crispy pakoras is delightful!
