Ingredients:


For Vegetable Filling:


➤1 cup boiled and mashed potatoes

➤1/2 cup boiled and mashed mixed vegetables (carrots, peas, beans)

➤1 small onion, finely chopped

➤1 small tomato, finely chopped

➤1 green chili, finely chopped (adjust to taste)

➤1/2 teaspoon ginger-garlic paste

➤1/2 teaspoon turmeric powder

➤1 teaspoon red chili powder

➤1/2 teaspoon garam masala

➤Salt to taste

➤Fresh coriander leaves, chopped


For Green Chutney:


➤1 cup fresh coriander leaves

➤1/2 cup fresh mint leaves

➤1-2 green chilies (adjust to taste)

➤1/2 teaspoon cumin powder

➤Salt to taste

➤1-2 teaspoons lemon juice


For Assembling:


➤Bread slices

➤Butter or ghee for toasting

➤Tomato ketchup


Instructions:


Vegetable Filling:

1. In a pan, heat oil. Add chopped onions and sauté until they turn translucent.

2. Add ginger-garlic paste and chopped green chili. Sauté for a minute.

3. Add chopped tomatoes and cook until they become soft and the oil starts separating.

4. Add turmeric powder, red chili powder, garam masala, and salt. Mix well.

5. Add mashed potatoes and mixed vegetables. Stir and cook for 2-3 minutes until the filling is well            combined.

6. Add chopped coriander leaves and mix. The vegetable filling is ready.


Green Chutney:

1. In a blender, combine coriander leaves, mint leaves, green chilies, cumin powder, salt, and lemon            juice.

2. Blend into a smooth chutney. Adjust the consistency by adding water if needed.


Assembling the Sandwich:


1. Take two bread slices. Apply butter or ghee on one side of each slice.

2. On the non-buttered side of one slice, spread a generous amount of the vegetable filling.

3. On the other slice, spread green chutney. Press both slices together to form a sandwich.

4. Heat a sandwich maker or a pan. Toast the sandwich until golden brown and crisp.

5. Cut the sandwich into halves or quarters.

6. Serve hot with tomato ketchup.
