Ingredients:
➤1 cup sama chawal (barnyard millet)
➤1/4 cup sabudana (tapioca pearls)
➤1/2 cup yogurt (plain curd)
➤Rock salt (sendha namak), to taste
➤1 teaspoon fruit salt (eno)
➤Water, as needed
➤Ghee or oil, for greasing the idli molds
Instructions:
1. Rinse the sama chawal and sabudana separately under running water until the water runs clear. Soak them in enough water for about 4-6 hours or overnight.
2. After soaking, drain the water from both the sama chawal and sabudana.
3. In a blender or mixer grinder, grind the soaked sama chawal and sabudana together to a smooth batter. Add yogurt and rock salt to the batter and blend again until well combined. The batter should be thick yet pourable. If necessary, add a little water to adjust the consistency.
4. Transfer the batter to a large bowl and let it ferment for 6-8 hours or overnight in a warm place. The fermentation process helps in making the idlis soft and fluffy.
5. Once the batter is fermented, mix it well. If the batter is too thick, add a little water to adjust the consistency.
6. Grease the idli molds with ghee or oil.
7. Just before steaming, add fruit salt (eno) to the batter and mix gently. You will notice the batter becoming frothy.
8. Pour the batter into the greased idli molds, filling each mold about 3/4 full.
9. Steam the idlis in a steamer for about 12-15 minutes or until a toothpick inserted into the center comes out clean.
10. Once done, remove the idli molds from the steamer and let them cool for a few minutes.
11. Carefully demold the idlis using a spoon or knife.
12. Serve the warm sama chawal idlis with coconut chutney, peanut chutney, or any other vrat-friendly chutney of your choice.
