Ingredients:
- 500 grams of okra (bhindi), washed and dried
- 2 large onions, thinly sliced
- 2 tomatoes, finely chopped
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust according to your spice preference)
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
Instructions:
- Trim the ends of the okra and cut them into 1-inch pieces. Keep them aside.
- Heat oil in a pan or skillet over medium heat. Add cumin seeds and let them splutter.
- Add the sliced onions and sauté until they turn golden brown.
- Add ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
- Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add the okra pieces and mix everything together. Cook for about 8-10 minutes, stirring occasionally, until the okra is cooked and tender.
- Sprinkle garam masala over the cooked bhindi and mix well.
- Cook for an additional 2-3 minutes, allowing the flavors to blend.
- Remove from heat and garnish with fresh coriander leaves.
- Serve hot with rice or roti.
