Chicken Chettinad

 Chicken Chettinad is a delicious and spicy South Indian curry dish known for its rich flavors. Here's a recipe to prepare Chicken Chettinad:


Ingredients:

  • 500 grams chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 tablespoon red chili powder (adjust according to your spice preference)
  • 2 tablespoons Chettinad masala powder (readily available in stores or homemade)
  • 1 teaspoon fennel seeds
  • 1 cinnamon stick
  • 4-5 cloves
  • 2-3 cardamom pods
  • 1 sprig curry leaves
  • Salt to taste
  • Fresh coriander leaves for garnish

For the Chettinad masala powder (dry roast and grind):

  • 2 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 1 tablespoon fennel seeds
  • 1 tablespoon black peppercorns
  • 1 teaspoon poppy seeds
  • 4-5 dried red chilies
  • 1-inch cinnamon stick
  • 4-5 cloves
  • 2-3 cardamom pods

Instructions:

  1. Dry roast all the ingredients listed under "Chettinad masala powder" until fragrant. Allow them to cool and then grind them into a fine powder using a spice grinder or mortar and pestle. Set aside.

  2. Heat oil in a large pan or kadai over medium heat. Add fennel seeds, cinnamon stick, cloves, cardamom pods, and curry leaves. Sauté for a minute until aromatic.

  3. Add chopped onions to the pan and sauté until they turn golden brown.

  4. Add ginger-garlic paste and cook for a couple of minutes until the raw smell disappears.

  5. Add the tomato puree and cook for another 3-4 minutes until the oil starts to separate from the mixture.

  6. Add turmeric powder, red chili powder, and Chettinad masala powder. Stir well to combine the spices with the onion-tomato base.

  7. Add the chicken pieces to the pan and coat them well with the spice mixture. Cook for 5-6 minutes on medium heat, stirring occasionally.

  8. Pour in 1 cup of water, cover the pan, and simmer for 20-25 minutes or until the chicken is cooked through and tender. Stir occasionally and add more water if needed.

  9. Once the chicken is cooked, check the seasoning and adjust salt and spices according to your taste.

  10. Garnish with freshly chopped coriander leaves.
