Ingredients:
- 1.5 pounds (700 grams) boneless, skinless chicken breast or thigh, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 tablespoons vegetable oil
- 2 tablespoons tikka masala spice mix (available in Indian grocery stores or you can make your own)
- 1 tablespoon ginger-garlic paste (or 1 teaspoon each of grated ginger and minced garlic)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon red chili powder (adjust according to your spice preference)
- Salt to taste
- Skewers for grilling
For garnish:
- Fresh cilantro (coriander) leaves, chopped
- Lemon wedges
Instructions:
In a mixing bowl, combine the yogurt, lemon juice, vegetable oil, tikka masala spice mix, ginger-garlic paste, ground cumin, ground coriander, turmeric, red chili powder, and salt. Mix well to form a smooth marinade.
Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight. This will allow the flavors to penetrate the meat.
If you're using wooden skewers, soak them in water for about 20-30 minutes. This helps prevent them from burning during grilling.
