Ingredients:


4-5 parottas (you can use store-bought or make them at home)

250 grams boneless chicken, cut into small pieces

1 onion, finely chopped

1 tomato, finely chopped

2-3 green chilies, finely chopped

1 tablespoon ginger-garlic paste

1/2 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to your spice preference)

1 teaspoon garam masala

1/2 teaspoon cumin powder

1/2 teaspoon coriander powder

Salt to taste

2 tablespoons oil

1 sprig curry leaves

Fresh coriander leaves for garnish

Lemon wedges for serving

Instructions:


Tear the parottas into small pieces using your hands. Set aside.

Heat oil in a large pan or kadai over medium heat. Add the chopped onions and green chilies. Sauté until the onions turn golden brown.

Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.

Add the chopped tomatoes and cook until they become soft and mushy.

Add the chicken pieces and mix well. Cook until the chicken is no longer pink and starts to brown.

Add the turmeric powder, red chili powder, garam masala, cumin powder, coriander powder, and salt. Mix everything together, ensuring the chicken is coated with the spices.

Cook for a few more minutes until the chicken is cooked through and tender.

Add the torn parotta pieces to the pan and mix well with the chicken and spices. Use a spatula or the back of a spoon to break down the parotta further into smaller pieces.

Add curry leaves and stir-fry for 2-3 minutes, allowing the parotta to absorb the flavors.

Garnish with fresh coriander leaves.

Serve hot with lemon wedges on the side.
