Curd Rice

 Curd rice is a popular South Indian dish that consists of cooked rice mixed with yogurt (curd) and often tempered with spices. It is a simple and comforting dish that is commonly consumed as a part of a meal or as a standalone dish.



To prepare curd rice, here's a basic recipe:

Ingredients:

  • 1 cup cooked rice (preferably short-grain rice)
  • 1 cup plain yogurt (curd)
  • 2 tablespoons milk (optional, for a creamier texture)
  • Salt to taste
  • For tempering (optional):
    • 1 tablespoon oil (preferably mustard oil)
    • 1 teaspoon mustard seeds
    • 1 teaspoon cumin seeds
    • 1-2 green chilies, chopped
    • A few curry leaves
    • A pinch of asafoetida (hing)

Instructions:

  1. Cook the rice as per the package instructions. Once cooked, let it cool down to room temperature.
  2. In a mixing bowl, whisk the yogurt until smooth. Add milk if you prefer a creamier consistency.
  3. Add the cooked rice to the bowl and mix well with the yogurt. Mash the rice slightly as you mix to achieve a creamy texture.
  4. Add salt to taste and mix again. Adjust the quantity of salt according to your preference.
  5. For tempering, heat oil in a small pan over medium heat. Add mustard seeds and let them splutter. Then add cumin seeds, chopped green chilies, curry leaves, and asafoetida. Stir for a few seconds until the spices are aromatic.
  6. Pour the tempering over the curd rice and mix well.
  7. Allow the curd rice to rest for at least 30 minutes to allow the flavors to meld together.
  8. Serve curd rice chilled or at room temperature as desired.

Curd rice can be enjoyed on its own or served with pickles, chutneys, or papadums. It is a soothing dish, especially during hot weather, and the tanginess of the yogurt complements the mildness of the rice.
