- 6 hard-boiled eggs
- 2 tablespoons vegetable oil

- 2 garlic cloves, minced
- 1-inch piece of ginger, grated

- 1 teaspoon ground cumin

Heat the vegetable oil in a large skillet or pan over medium heat. Add the chopped onions and sauté until they turn golden brown.

Add the chopped tomatoes to the pan and cook until they soften and release their juices.
In a small bowl, mix together the curry powder, ground cumin, turmeric powder, and chili powder. Add this spice mixture to the pan and stir well, coating the onions and tomatoes.
Reduce the heat to low and pour in the coconut milk. Stir to combine everything together. Allow the curry to simmer for about 5 minutes, allowing the flavors to meld together.
While the curry is simmering, peel the hard-boiled eggs and make a few shallow cuts on each egg with a sharp knife. This will help the eggs absorb the flavors of the curry.
Gently place the eggs into the curry, making sure they are submerged in the sauce. Allow the curry to cook for an additional 5-7 minutes, stirring occasionally.
Taste the curry and season with salt according to your preference. If you like it spicier, you can add more chili powder at this stage.
Once the eggs have soaked up the flavors and the curry has thickened slightly, remove the pan from the heat.
