Mughal Mutton Curry

Ingredients:

  • 500 grams mutton, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 cup yogurt
  • 1/4 cup fresh cream
  • 3 tablespoons ghee (clarified butter)
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnishing

For the Marinade:

  • 1/2 cup yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste

Instructions:

  1. In a bowl, mix the ingredients for the marinade - yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Add the mutton pieces to the marinade and coat them well. Let it marinate for at least 2 hours or overnight in the refrigerator.

  2. Heat ghee and oil in a large pan or pressure cooker over medium heat. Add the chopped onions and sauté until they turn golden brown.

  3. Add the ginger-garlic paste to the pan and cook for a minute until the raw smell disappears.

  4. Now, add the tomato puree and cook for a few minutes until the oil separates from the mixture.

  5. Add the marinated mutton pieces to the pan and cook on high heat for about 5 minutes, stirring continuously.

  6. Reduce the heat to medium and add red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Mix well to coat the mutton with the spices.

  7. Cover the pan or pressure cooker with a lid and cook on low heat for about 40-45 minutes until the mutton is tender. If using a pressure cooker, cook for about 15-20 minutes after the first whistle.

  8. Once the mutton is cooked, add yogurt and fresh cream to the pan. Mix well and cook for another 5 minutes on low heat.

  9. Sprinkle garam masala over the curry and give it a final stir.

  10. Garnish with fresh coriander leaves and serve the Mughal Mutton Curry hot with naan, roti, or steamed rice.
