Sure! Here's a recipe for preparing mutton curry:


Ingredients:


500 grams mutton, cut into pieces

2 onions, finely chopped

2 tomatoes, pureed

2 tablespoons ginger-garlic paste

2 green chilies, slit

1 teaspoon turmeric powder

1 tablespoon red chili powder

1 tablespoon coriander powder

1 teaspoon cumin powder

1 teaspoon garam masala

1/2 cup yogurt

3 tablespoons vegetable oil

Salt to taste

Fresh coriander leaves, chopped (for garnish)

Instructions:


Heat oil in a large, heavy-bottomed pan or pressure cooker over medium heat.


Add the chopped onions and sauté until they turn golden brown.


Add the ginger-garlic paste and green chilies. Cook for a minute until the raw smell disappears.


Add the mutton pieces to the pan and cook until they are browned on all sides.


Add the tomato puree, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well to coat the mutton with the spices.


Reduce the heat to low and cook for about 10 minutes, stirring occasionally to prevent sticking.


In a separate bowl, whisk the yogurt until smooth. Add the yogurt to the pan and mix well. Cook for another 5 minutes.


If using a pressure cooker, cover it with the lid and cook for about 20-25 minutes or until the mutton is tender. If using a regular pan, cover it with a lid and simmer on low heat for about 1-2 hours until the mutton is tender. You may need to add some water if required.


Once the mutton is cooked, sprinkle garam masala over it and mix well. Cook for another 2 minutes.


Garnish with fresh coriander leaves and serve hot with rice, naan, or roti.
