Neer Dosa

 Neer dosa is a popular and delicious pancake-like dish from the coastal regions of Karnataka and parts of Kerala, India. "Neer" in Kannada means "water," and "dosa" refers to a crepe or pancake. Neer dosa is called so because of its thin and watery batter. It is typically served with chutney or sambar.

Here's a simple recipe for preparing neer dosa:

Ingredients:

  • 1 cup rice (preferably sona masuri or any other raw rice)
  • Water for soaking
  • Salt to taste
  • Oil or ghee for cooking

Instructions:

  1. Wash the rice thoroughly and soak it in water for at least 4-5 hours or overnight. This step ensures that the rice becomes soft and blends well to form a smooth batter.
  2. After soaking, drain the water from the rice and transfer it to a blender or a wet grinder. Add about 1/2 to 3/4 cup of water and blend it to a smooth paste. The batter should have a pouring consistency, similar to buttermilk or thin pancake batter.
  3. Add salt to taste and give it a quick mix.
  4. Heat a non-stick or cast-iron skillet (tawa) on medium heat. Grease it lightly with oil or ghee.
  5. Take a ladleful of the neer dosa batter and pour it in a circular motion on the heated skillet. Start from the outside and work your way inward, creating a thin dosa. You can adjust the thickness of the dosa according to your preference.
  6. Drizzle a little oil or ghee around the edges of the dosa and cook it on medium heat for a minute or until the edges turn slightly golden brown.
  7. Once the edges crisp up, gently lift the neer dosa from the edges using a spatula and fold it in half or roll it loosely.
  8. Remove the dosa from the skillet and repeat the process with the remaining batter.
  9. Serve the neer dosa hot with your choice of chutney (like coconut chutney or tomato chutney) or sambar.

Neer dosa is best enjoyed fresh and hot. The batter does not require fermentation, making it a quick and easy dish to prepare. The thin and delicate texture of neer dosa makes it a perfect accompaniment to spicy chutneys or sambar. Enjoy your neer dosa!
