250 grams paneer (cottage cheese), cubed
2 bunches of spinach (palak), washed and finely chopped
1 large onion, finely chopped
2 tomatoes, pureed
2-3 green chilies, finely chopped
1 tablespoon ginger-garlic paste
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon garam masala
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/2 cup heavy cream or yogurt (optional)
Salt to taste
2 tablespoons oil or ghee (clarified butter)
Instructions:
Heat oil or ghee in a pan and add cumin seeds. Allow them to splutter.
Add the finely chopped onions and sauté until golden brown.
Add the ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
Add the tomato puree and cook until the oil separates from the masala.
Add the turmeric powder, cumin powder, coriander powder, and garam masala. Mix well and cook for a minute.
Now, add the finely chopped spinach (palak) and stir well. Cook for 5-7 minutes until the spinach wilts and reduces in volume.
Remove the mixture from the heat and let it cool down a bit.
Blend the spinach mixture into a smooth puree using a blender or immersion blender.
Return the pureed mixture to the pan and place it over low heat.
Add the cubed paneer and salt to taste. Stir gently to coat the paneer with the spinach puree. If desired, you can add heavy cream or yogurt at this stage for a creamier texture.
Cook for another 5 minutes, allowing the flavors to blend together. If the consistency is too thick, you can add a little water to adjust it.
Once done, turn off the heat and your Palak Paneer is ready to be served.
Garnish with a drizzle of cream and serve hot with naan, roti, or rice.
