Here's a step-by-step guide to preparing Paya soup:
- Clean the lamb trotters thoroughly under running water. You can ask your butcher to clean them or do it yourself.
- In a large pot, add the cleaned trotters and enough water to cover them completely. Bring the water to a boil and cook the trotters for about 5 minutes. Then drain the water and rinse the trotters again under cold water.
- In the same pot, add fresh water, ginger-garlic paste, and salt. Bring it to a boil and add the trotters. Cook them on medium heat until they become tender and the meat starts to separate from the bones. This process may take around 1.5 to 2 hours, depending on the size and tenderness of the trotters. You can also use a pressure cooker to save time.
- Once the trotters are cooked, remove them from the pot and set aside. Reserve the cooking stock.
- In another large pot, heat some oil or ghee over medium heat. Add cumin seeds, bay leaf, cinnamon stick, cloves, and black peppercorns. Sauté them until they release their aroma.
- Add the finely chopped onions to the pot and cook until they turn golden brown.
- Now, add the ginger-garlic paste and green chilies. Sauté for a couple of minutes.
- Add the chopped tomatoes and cook until they soften and release their juices.
