Ingredients:
- 1 cup whole green gram (moong dal)
- 1/4 cup raw rice
- 2-3 green chilies (adjust according to your spice preference)
- 1-inch piece of ginger, peeled
- A handful of fresh coriander leaves
- Salt to taste
- Oil for cooking
Optional toppings:
- Finely chopped onions
- Finely chopped green chilies
- Grated coconut
Instructions:
Rinse the green gram and raw rice under running water. Soak them together in water for about 4-5 hours. You can also soak them overnight for convenience.
After soaking, drain the water and transfer the green gram and rice to a blender or food processor. Add green chilies, ginger, coriander leaves, and salt to the blender.
Blend everything together until you get a smooth batter. If needed, you can add a little water to get the right consistency. The batter should be thick, similar to dosa batter.
Once the batter is ready, heat a flat non-stick or cast-iron skillet or tawa over medium heat.
Take a ladleful of batter and pour it onto the center of the skillet. Using the back of the ladle, spread the batter in a circular motion to form a thin round shape.
Drizzle a little oil around the edges of the pesarattu and on top. Allow it to cook for a couple of minutes until the edges start to turn golden brown.
Flip the pesarattu using a spatula and cook the other side for another minute or so.
Once cooked, transfer the pesarattu to a serving plate. Repeat the process with the remaining batter to make more pesarattus.
Serve hot pesarattus with coconut chutney, ginger chutney, or tomato chutney. You can also sprinkle finely chopped onions, green chilies, and grated coconut on top for added flavor.
