Pulihora, also known as tamarind rice, is a popular South Indian dish. It is a tangy and flavorful rice dish made with cooked rice and a special spice mix. Here's a simple recipe to prepare Pulihora:
Ingredients:
2 cups cooked rice (preferably leftover rice)
1 lemon-sized tamarind pulp
3 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon chana dal (split Bengal gram)
1 teaspoon urad dal (split black gram)
1/2 teaspoon fenugreek seeds
2-3 dried red chilies, broken into pieces
8-10 curry leaves
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (optional)
1/2 teaspoon salt (adjust to taste)
2 tablespoons roasted peanuts (optional)
2 tablespoons chopped coriander leaves (for garnish)
Instructions:
Soak the tamarind pulp in 1/2 cup of warm water for about 15 minutes. Squeeze the pulp to extract the tamarind juice, and discard any seeds or fibers. Set the tamarind juice aside.
Heat oil in a pan or a kadai over medium heat.
Add the mustard seeds and let them splutter.
Add the chana dal, urad dal, fenugreek seeds, and dried red chilies. Fry until the dals turn golden brown.
Add the curry leaves and sauté for a few seconds.
Reduce the heat to low and add the tamarind juice to the pan. Stir well.
Add turmeric powder, red chili powder (if using), and salt. Mix everything together and let the mixture simmer for about 5-7 minutes until the raw smell of tamarind disappears and the mixture thickens slightly.
Once the tamarind mixture is ready, remove it from the heat and let it cool for a few minutes.
In a large mixing bowl, add the cooked rice. Pour the tamarind mixture over the rice and gently mix everything together until the rice is well-coated with the tamarind mixture.
Add roasted peanuts (if using) and mix again.
Garnish with chopped coriander leaves.
Allow the Pulihora to sit for about 10-15 minutes to allow the flavors to meld together.
Serve Pulihora at room temperature as a standalone dish or with papadams, yogurt, or pickle.
