Rogan josh is a flavorful and aromatic Indian dish traditionally made with tender chunks of meat cooked in a rich, spiced gravy. The recipe below provides a basic version of rogan josh. Here's a recipe for preparing rogan josh::
Ingredients
500 grams (1 lb) boneless meat (such as lamb, mutton, or beef), cut into cubes
3 tablespoons vegetable oil or ghee (clarified butter)
2 medium onions, finely chopped
4 cloves of garlic, minced
1-inch piece of fresh ginger, grated
2 tomatoes, finely chopped
2 teaspoons ground coriander
1 teaspoon ground cumin
1 teaspoon paprika or Kashmiri red chili powder (adjust to your preferred level of spiciness)
1/2 teaspoon turmeric powder
1/2 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 cup plain yogurt, whisked
1 cup water (adjust as needed)
Salt to taste
Fresh cilantro (coriander leaves), chopped for garnish
Instructions:
Heat the oil or ghee in a large, deep pan or Dutch oven over medium heat.
Add the chopped onions to the pan and sauté until they turn golden brown.
Add the minced garlic and grated ginger, and cook for another minute, stirring continuously.
Add the chopped tomatoes to the pan and cook until they soften and release their juices.
In a separate bowl, combine the ground coriander, cumin, paprika or red chili powder, turmeric powder, ground cardamom, ground cinnamon, and ground cloves. Mix well.
Add the spice mixture to the pan and sauté for a minute to toast the spices and release their flavors.
Add the cubed meat to the pan and stir to coat it evenly with the spices.
Pour in the whisked yogurt and mix well to combine with the spices and meat.
Reduce the heat to low, cover the pan, and let the meat cook in the yogurt and spice mixture for about 1 hour or until it becomes tender. Stir occasionally and add water if necessary to prevent sticking or drying out.
Once the meat is tender, season with salt according to your taste preferences. Adjust the consistency of the gravy by adding more water if desired.
Continue to simmer for another 10-15 minutes to allow the flavors to meld together.
Remove from heat and garnish with fresh cilantro leaves.
Serve hot with steamed basmati rice, naan bread, or roti.
