2 cups all-purpose flour (maida)

Instructions:


1.  In a mixing bowl, combine the all-purpose flour, ghee or oil, and salt. Mix well using your hands until the mixture resembles breadcrumbs.


2.  Gradually add water, a little at a time, and knead the mixture into a smooth and firm dough. Cover the dough with a damp cloth and let it rest for about 20-30 minutes.


3.  Meanwhile, heat some oil in a pan. Add cumin seeds and let them splutter. Then, add ginger paste and garlic paste. Sauté for a minute until the raw smell disappears.

4. Add boiled peas, mashed potatoes, red chili powder, garam masala, amchur, and salt. Mix well and cook for a few minutes until the filling is well combined and heated through. Turn off the heat and add chopped coriander leaves. Allow the filling to cool.


5.  Divide the dough into small lemon-sized balls. Take one ball and roll it out into a thin circle of about 6-7 inches in diameter.


6.  Cut the circle in half. Take one half and fold it into a cone shape, overlapping the straight edge to form a cone.


7.  Fill the cone with the potato-pea filling, leaving a small space at the top. Apply some water on the edges and press to seal the cone, ensuring the filling is tightly enclosed.


8.  Repeat the process with the remaining dough and filling to make more samosas.


9.  Heat oil in a deep frying pan or kadhai on medium heat. Carefully slide in the samosas, a few at a time, and fry until they turn golden brown and crispy. Remove them from the oil and drain on a paper towel to remove excess oil.


10.  Serve hot with chutney or ketchup.
