Ingredients:


2 pounds (1 kg) chicken pieces (with or without bones)

1 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons vegetable oil

2 tablespoons tandoori masala (available in stores or you can make your own)

1 tablespoon ginger-garlic paste

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon paprika (optional, for added color)

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder (adjust according to your spice preference)

Salt to taste

Fresh cilantro leaves for garnish

Lemon wedges for serving

Instructions:


In a large bowl, combine the yogurt, lemon juice, vegetable oil, tandoori masala, ginger-garlic paste, cumin, coriander, paprika, turmeric powder, red chili powder, and salt. Mix well to form a smooth marinade.


Make shallow cuts on the chicken pieces to allow the marinade to penetrate. Add the chicken to the marinade and coat each piece evenly. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, or preferably overnight. The longer the marination, the better the flavors will develop.


Preheat your grill or oven to high heat. If using a grill, make sure the grates are clean and well-oiled.


Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken on the grill or on a baking sheet if using the oven.


If using a grill, cook the chicken over medium-high heat, turning occasionally, until the chicken is cooked through and slightly charred on the outside. This will take about 20-25 minutes, depending on the size and thickness of the chicken pieces. If using an oven, bake the chicken at 425°F (220°C) for 25-30 minutes or until cooked through.


Once cooked, remove the chicken from the heat and let it rest for a few minutes. Garnish with fresh cilantro leaves and serve with lemon wedges on the side.
