Ingredients:
For the potato vada:
4 large potatoes, boiled and mashed
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 teaspoon ginger-garlic paste
2-3 green chilies, finely chopped
A few curry leaves, chopped
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt to taste
Fresh coriander leaves, chopped
For the chutneys:
Green chutney (made from coriander leaves, green chilies, mint leaves, lemon juice, and salt)
Tamarind chutney (made from tamarind pulp, jaggery, dates, and spices)
For assembling:
4 pav buns
Butter for toasting the buns
Fried green chilies (optional)
Instructions:
1. Heat oil in a pan and add mustard seeds. Once they crackle, add cumin seeds and sauté for a few seconds.
2. Add ginger-garlic paste, chopped green chilies, and curry leaves. Sauté for a minute.
3. Add turmeric powder, red chili powder, and salt. Mix well.
4. Add the mashed potatoes and mix everything together. Cook for 2-3 minutes, stirring occasionally.
5. Turn off the heat and add chopped coriander leaves. Allow the mixture to cool down.
6. Meanwhile, prepare the green chutney and tamarind chutney by blending the ingredients mentioned above for each chutney separately. Adjust the consistency and taste as per your preference.
7. Slice the pav buns horizontally, but not completely through, so that one side is still attached.
8. Apply butter on the inner sides of the buns and toast them on a griddle until they turn golden brown.
9. Take a portion of the potato mixture and shape it into a ball. Flatten it slightly to form a patty.
10. Dip the patty in gram flour batter (made by mixing gram flour, water, salt, and a pinch of turmeric powder) and deep fry until golden and crispy.
11. Drain the fried vada on a kitchen towel to remove excess oil.
12. To assemble, spread green chutney on one side of the pav and tamarind chutney on the other side.
13. Place a vada in the center and press it lightly.
14. Optionally, serve with fried green chilies on the side.
