How to prepare veg biryani 

Here's a recipe for preparing vegetable biryani:


Ingredients:


2 cups basmati rice

2 tablespoons ghee (clarified butter) or vegetable oil

1 large onion, thinly sliced

2 carrots, diced

1 cup green beans, cut into 1-inch pieces

1 cup cauliflower florets

1 cup green peas

1 bell pepper, diced

2 tomatoes, chopped

2 tablespoons biryani masala powder

1 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

1 teaspoon garam masala powder

1/2 cup plain yogurt

1 cup chopped mint leaves

1 cup chopped coriander leaves

Salt to taste

Saffron strands (optional) soaked in 2 tablespoons of warm milk

Fried onions for garnishing (optional)

Instructions:


1.  Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain the water and set aside.


2.  Heat ghee or vegetable oil in a large pot or deep pan over medium heat. Add the sliced onions and sauté until they turn golden brown and crispy. Remove half of the fried onions from the pan and set aside for garnishing.


3.  In the same pot, add the diced carrots, green beans, cauliflower florets, green peas, and bell pepper. Sauté for a few minutes until the vegetables are slightly tender.


4.  Add the chopped tomatoes and cook until they soften. Then, add the biryani masala powder, turmeric powder, red chili powder, and garam masala powder. Stir well to coat the vegetables with the spices.


5.  Reduce the heat to low and add the plain yogurt, chopped mint leaves, and chopped coriander leaves. Mix everything together.


6. Add the soaked and drained basmati rice to the pot, spreading it evenly over the vegetables. Gently pour 4 cups of water into the pot. Season with salt according to your taste.


7.  Cover the pot with a tight-fitting lid and cook on low heat for about 20-25 minutes, or until the rice is fully cooked and the flavors have melded together. Avoid stirring the biryani during this time to prevent the rice from becoming mushy.


8. Once the rice is cooked, turn off the heat and let it sit covered for 5-10 minutes. This allows the flavors to develop further.


9.  If desired, drizzle the saffron milk over the rice to give it a fragrant and visually appealing touch. Garnish with the reserved fried onions.


10.  Serve the vegetable biryani hot with raita (yogurt sauce) or a side salad.
