 Amritsari Fish is a popular and flavorful dish from the city of Amritsar in Punjab, India. It is known for its crispy coating and tangy flavors. Amritsari Fish is made using fresh fish fillets that are marinated in a blend of spices and then deep-fried to perfection. Here's a recipe to prepare Amritsari Fish:



Ingredients:

  • 500 grams boneless fish fillets (such as tilapia or cod)
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon ajwain (carom seeds)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1/2 cup gram flour (besan)
  • 2 tablespoons rice flour
  • Oil for deep frying
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

Instructions:

  1. In a bowl, combine ginger-garlic paste, lemon juice, red chili powder, turmeric powder, coriander powder, cumin powder, ajwain, garam masala, and salt to make a marinade.

  2. Cut the fish fillets into desired sizes and pat them dry with a paper towel.

  3. Add the fish fillets to the marinade and coat them well. Let them marinate for at least 30 minutes to allow the flavors to infuse.

  4. In a separate bowl, mix gram flour and rice flour together.

  5. Heat oil in a deep frying pan or kadai over medium heat.

  6. Take each marinated fish fillet and coat it with the gram flour and rice flour mixture, ensuring it is evenly coated.

  7. Carefully drop the coated fish fillets into the hot oil and fry them until they turn golden brown and crispy. Fry them in batches, making sure not to overcrowd the pan.

  8. Once fried, remove the fish fillets from the oil using a slotted spoon and drain them on a paper towel to remove excess oil.

  9. Garnish with fresh coriander leaves.
