Bajra Ki Raab

 Bajra Ki Raab is a traditional Rajasthani dish made from pearl millet flour (bajra). It is a nutritious and warming drink, particularly popular during winters. Here's a recipe to prepare Bajra Ki Raab:




Ingredients:

  • 1/4 cup bajra flour (pearl millet flour)
  • 4 cups water
  • 1 cup buttermilk
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon ghee or oil
  • Salt to taste
  • Fresh coriander leaves for garnishing

Instructions:

  1. Heat ghee or oil in a deep pan or kadhai over medium heat.

  2. Add cumin seeds to the pan and let them splutter.

  3. Reduce the heat to low and add the bajra flour to the pan. Roast the flour, stirring continuously, until it turns slightly golden and releases a nutty aroma. This will take about 4-5 minutes.

  4. In a separate saucepan, bring 4 cups of water to a boil.

  5. Slowly add the boiling water to the roasted bajra flour, stirring continuously to prevent lumps from forming.

  6. Add turmeric powder and salt to the mixture. Mix well.

  7. Cook the mixture on low heat for about 15-20 minutes, stirring occasionally. The bajra flour will cook and thicken the raab.

  8. Gradually add buttermilk to the pan, stirring continuously. Make sure it is well incorporated into the raab.

  9. Continue to simmer the raab for another 5-10 minutes, allowing the flavors to blend together.

  10. Taste the raab and adjust the salt and seasoning if needed.

  11. Garnish with fresh coriander leaves.
