To prepare Balushahi, a popular Indian sweet, you will need the following ingredients:
Ingredients:
- 2 cups all-purpose flour (maida)
- 1/2 cup ghee (clarified butter), melted
- 1/2 cup yogurt
- 1/4 teaspoon baking soda
- 1 cup sugar
- 1 cup water
- 1/2 teaspoon cardamom powder
- Sliced pistachios or almonds for garnishing
- Oil or ghee for deep frying
Here's a step-by-step guide to making Balushahi:
In a mixing bowl, combine the all-purpose flour, melted ghee, yogurt, and baking soda. Mix well to form a smooth dough. Cover the dough and let it rest for about 15-20 minutes.
Meanwhile, prepare the sugar syrup. In a saucepan, add sugar and water. Bring it to a boil over medium heat, stirring until the sugar dissolves completely. Cook the syrup for a few more minutes until it reaches a one-string consistency. Add cardamom powder and mix well. Keep the sugar syrup warm.
After the resting time, divide the dough into small lemon-sized portions and shape them into smooth balls. Make a small indentation in the center of each ball with your thumb or the back of a spoon.
Heat oil or ghee in a deep frying pan over medium heat. Once the oil is hot, carefully slide in the shaped dough balls in batches. Fry them on low to medium heat until they turn golden brown and crispy. Flip them occasionally to ensure even frying. This process may take around 8-10 minutes.
Remove the fried Balushahi from the oil using a slotted spoon and drain them on a paper towel to remove excess oil.
Dip the fried Balushahi into the warm sugar syrup, ensuring they are coated well. Allow them to soak in the syrup for a few minutes.
Remove the Balushahi from the syrup using a slotted spoon and place them on a wire rack to drain any excess syrup. Garnish each Balushahi with sliced pistachios or almonds while they are still slightly wet.
Let the Balushahi cool completely at room temperature. As they cool, they will become firm and have a flaky texture.
Balushahi is now ready to be served. These sweet and flaky pastries are a delightful treat, especially during festivals and celebrations. Store them in an airtight container to maintain their freshness.
