Banana fritters

 Banana fritters, also known as Pazham Pori in Kerala, are a popular snack in South India. They are made by coating ripe bananas in a sweet and crispy batter and deep-frying them to perfection. Here's a simple recipe to make banana fritters:


Ingredients:

  • 2 ripe bananas (preferably plantains)
  • 1 cup all-purpose flour
  • 2 tablespoons rice flour
  • 2 tablespoons sugar (adjust to taste)
  • 1/2 teaspoon baking powder
  • A pinch of salt
  • 1/2 teaspoon cardamom powder
  • Water as needed
  • Oil for deep frying

Instructions:

  1. In a mixing bowl, combine all-purpose flour, rice flour, sugar, baking powder, salt, and cardamom powder.
  2. Gradually add water to the dry ingredients and whisk until you achieve a smooth and thick batter consistency. The batter should be thick enough to coat the bananas but still flow easily.
  3. Peel the bananas and cut them into halves or slices, depending on your preference.
  4. Heat oil in a deep frying pan or kadai over medium heat.
  5. Dip each banana slice into the batter, ensuring it is evenly coated on all sides.
  6. Gently drop the coated banana slices into the hot oil, one at a time. Be cautious to not overcrowd the pan.
  7. Fry the banana fritters until they turn golden brown and crispy on both sides. Flip them occasionally for even cooking.
  8. Once the fritters are cooked, use a slotted spoon to remove them from the oil and transfer them to a paper towel-lined plate to drain excess oil.
  9. Repeat the process with the remaining banana slices and batter.
  10. Serve the banana fritters hot as a snack or dessert.
