Ingredients:

  • 2 medium-sized beetroots, peeled and diced
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit (adjust according to your spice preference)
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust according to your spice preference)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro leaves for garnish

Instructions:

  1. Heat oil in a large pan or skillet over medium heat. Add cumin seeds and mustard seeds and let them splutter.

  2. Add the chopped onion, minced garlic, grated ginger, and green chilies to the pan. Sauté until the onions become translucent and the mixture becomes fragrant.

  3. Add the diced beetroots to the pan and mix well with the onion mixture. Cook for a few minutes to lightly sauté the beetroots.

  4. Add turmeric powder, coriander powder, red chili powder, and salt to the pan. Stir well to coat the beetroots with the spices.
