Bread roll

Bread roll is a delicious snack made with a filling of spiced potatoes, vegetables, and sometimes paneer (Indian cottage cheese), rolled in bread slices and then deep-fried until crispy and golden. Here's a recipe to make bread rolls:


Ingredients:

  • 8 slices of bread (white or whole wheat)
  • 3 medium-sized potatoes, boiled and mashed
  • 1/2 cup mixed vegetables (carrots, peas, corn), boiled and finely chopped
  • 1/4 cup crumbled paneer (optional)
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon cumin seeds
  • Salt to taste
  • Oil for deep frying

For batter:

  • 1/2 cup all-purpose flour
  • Water (as needed to make a thick paste)
  • A pinch of salt

Instructions:

  1. Heat a tablespoon of oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the chopped onions and green chilies to the pan. Sauté until the onions turn translucent.
  3. Add ginger-garlic paste and sauté for another minute until the raw aroma disappears.
  4. Add turmeric powder, red chili powder, garam masala powder, and salt. Mix well.
  5. Add the boiled and mashed potatoes, mixed vegetables, and crumbled paneer (if using). Mix everything together until well combined. Cook for a couple of minutes, stirring occasionally.
  6. Remove the filling from the heat and allow it to cool down to room temperature.
  7. Take a bread slice and trim the edges. Place a spoonful of the prepared filling on one side of the bread.
  8. Roll the bread tightly from one end to form a cylindrical shape, sealing the edges with a little water to ensure they stick.
  9. Repeat the process with the remaining bread slices and filling.
  10. In a shallow bowl, prepare a thick paste by mixing all-purpose flour, water, and a pinch of salt to form a smooth batter. The consistency should be thick enough to coat the bread rolls.
  11. Heat oil in a deep pan or kadai over medium heat for deep frying.
  12. Dip each prepared bread roll into the batter, ensuring it is evenly coated on all sides.
  13. Gently place the coated bread rolls into the hot oil and fry them until they turn golden brown and crispy. Fry them in batches to avoid overcrowding the pan.
  14. Once the bread rolls are cooked, remove them from the oil using a slotted spoon and drain the excess oil on a paper towel-lined plate.
  15. Serve the hot and crispy bread rolls with ketchup, mint chutney, or any dipping sauce of your choice.
