Ingredients:
- 2 cups cooked rice (preferably cooled or leftover rice)
- 1 cup grated coconut (fresh or desiccated)
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon split urad dal (skinned black lentils)
- 1 teaspoon chana dal (split Bengal gram)
- 1/4 teaspoon asafoetida (hing)
- 10-12 curry leaves
- 2 green chilies, slit lengthwise (adjust according to spice preference)
- 1/4 cup roasted peanuts
- Salt to taste
Instructions:
- Heat oil in a large pan or kadai over medium heat.
- Add mustard seeds and let them splutter.
- Add the split urad dal, chana dal, and asafoetida. Sauté until the dals turn golden brown.
- Add curry leaves and slit green chilies. Sauté for a minute until fragrant.
- Add grated coconut to the pan and sauté for a few minutes until it turns slightly golden and releases its aroma.
- Add roasted peanuts and mix well.
- Reduce the heat to low and add the cooked rice to the pan. Gently mix everything together, ensuring the coconut mixture is evenly distributed throughout the rice.
- Add salt to taste and continue mixing until the rice is evenly seasoned.
- Cook the rice on low heat for a few more minutes, stirring occasionally, to allow the flavors to blend together.
