Coconut Rice

 Coconut Rice is a fragrant and flavorful South Indian dish made with cooked rice and grated coconut. It is a delicious and aromatic dish that can be enjoyed on its own or paired with curries, chutneys, or yogurt. Here's a recipe to prepare Coconut Rice:



Ingredients:

  • 2 cups cooked rice (preferably cooled or leftover rice)
  • 1 cup grated coconut (fresh or desiccated)
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon split urad dal (skinned black lentils)
  • 1 teaspoon chana dal (split Bengal gram)
  • 1/4 teaspoon asafoetida (hing)
  • 10-12 curry leaves
  • 2 green chilies, slit lengthwise (adjust according to spice preference)
  • 1/4 cup roasted peanuts
  • Salt to taste

Instructions:

  1. Heat oil in a large pan or kadai over medium heat.
  2. Add mustard seeds and let them splutter.
  3. Add the split urad dal, chana dal, and asafoetida. Sauté until the dals turn golden brown.
  4. Add curry leaves and slit green chilies. Sauté for a minute until fragrant.
  5. Add grated coconut to the pan and sauté for a few minutes until it turns slightly golden and releases its aroma.
  6. Add roasted peanuts and mix well.
  7. Reduce the heat to low and add the cooked rice to the pan. Gently mix everything together, ensuring the coconut mixture is evenly distributed throughout the rice.
  8. Add salt to taste and continue mixing until the rice is evenly seasoned.
  9. Cook the rice on low heat for a few more minutes, stirring occasionally, to allow the flavors to blend together.
  10. Turn off the heat and garnish the coconut rice with some additional curry leaves, if desired.
  11. Serve the Coconut Rice hot or at room temperature as a main dish or a side dish. It pairs well with curries, chutneys, or yogurt.
