Dabeli recipe

Dabeli is a popular street food snack from Gujarat, India. It is a spicy and tangy potato filling served in a bun, along with various chutneys, sev (crispy noodles), and other toppings. Here's a recipe to make Dabeli:



Ingredients: For the potato filling:

  • 4 medium-sized potatoes, boiled, peeled, and mashed
  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida (hing)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 tablespoon dabeli masala (available in Indian grocery stores)
  • Salt to taste
  • 2 tablespoons tamarind-date chutney
  • 2 tablespoons roasted peanuts, coarsely crushed
  • 2 tablespoons chopped coriander leaves
  • 2 tablespoons pomegranate seeds (optional)
  • 2 tablespoons grated coconut (optional)

For assembling:

  • 6-8 pav buns (dinner rolls)
  • Tamarind-date chutney
  • Green chutney
  • Garlic chutney (optional)
  • Nylon sev (crispy noodles)
  • Thinly sliced onions
  • Chopped coriander leaves
  • Butter for toasting the buns

Instructions:

  1. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them crackle.
  2. Add asafoetida, turmeric powder, red chili powder, and dabeli masala to the pan. Stir well to combine the spices.
  3. Add the mashed potatoes and salt to the pan. Mix thoroughly, ensuring the potatoes are coated with the spice mixture. Cook for 2-3 minutes.
  4. Add tamarind-date chutney to the potato mixture and mix well. Cook for another 2 minutes. Remove from heat.
  5. Add crushed peanuts and chopped coriander leaves to the potato mixture. Mix well.
  6. Slice the pav buns horizontally, leaving one side intact to form a pocket.
  7. Apply tamarind-date chutney on one side of the bun and green chutney on the other side. Optionally, you can also apply garlic chutney for an extra kick.
  8. Stuff the potato filling generously into the buns. Press the buns gently to close the pockets.
  9. Heat a tawa or griddle over medium heat. Spread butter on the tawa and place the stuffed buns on it.
  10. Toast the buns on both sides until they turn golden brown and crispy.
  11. Remove the toasted buns from the tawa and transfer them to a serving plate.
  12. Sprinkle nylon sev generously over the stuffed buns.
  13. Garnish with sliced onions, chopped coriander leaves, and additional toppings like grated coconut and pomegranate seeds if desired.
  14. Serve the Dabeli immediately with extra chutneys and sev on the side.
