Dal Bati Churma is a traditional and popular dish from the state of Rajasthan, India. It consists of three components: Dal (lentil curry), Bati (baked wheat dough balls), and Churma (sweet crumbled wheat dessert). Let's go through the recipe for each part:
- Dal (Lentil Curry):
Ingredients:
- 1 cup tuvar dal (pigeon peas)
- 1 small onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- Salt to taste
- 2 tablespoons ghee (clarified butter)
- Fresh coriander leaves for garnish
Instructions:
Rinse the tuvar dal thoroughly and soak it in water for about 30 minutes. Then, drain the water.
Pressure cook the dal with 2 cups of water, turmeric powder, and salt for about 4-5 whistles, or until the dal is soft and cooked.
In a separate pan, heat ghee and add cumin seeds. Once they crackle, add asafoetida and chopped onions. Sauté until the onions turn golden brown.
Add ginger-garlic paste and green chilies. Cook for a minute until the raw smell disappears.
Add chopped tomatoes, red chili powder, and salt. Cook until the tomatoes become soft and mushy.
Pour the cooked dal into the pan and mix well. Adjust the consistency of the dal by adding water if needed. Simmer for 10-15 minutes on low heat.
Garnish with fresh coriander leaves. Your dal is ready.
