Deviled Sweet and Sour Fish Curry

Ingredients:

  • 500 grams fish fillets (any firm white fish like tilapia or cod)
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, finely chopped (adjust according to your spice preference)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 carrot, sliced
  • 1 tablespoon tomato paste
  • 2 tablespoons soy sauce
  • 2 tablespoons vinegar
  • 1 tablespoon sugar
  • 1 teaspoon red chili flakes
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Fresh cilantro leaves for garnish
  • Cooking oil

Instructions:

  1. Rinse the fish fillets under cold water, pat them dry with a paper towel, and cut them into bite-sized pieces. Sprinkle some salt and turmeric powder over the fish pieces and set aside.

  2. Heat a couple of tablespoons of oil in a large skillet or wok over medium heat. Add the fish pieces and cook until they are lightly browned on both sides. Remove the fish from the pan and set aside.

  3. In the same pan, add a little more oil if needed, then add the chopped onion, minced garlic, grated ginger, and green chilies. Sauté until the onions become translucent and the mixture becomes fragrant.

  4. Add the sliced bell peppers and carrot to the pan and stir-fry for a few minutes until they start to soften.

  5. In a small bowl, mix together the tomato paste, soy sauce, vinegar, sugar, red chili flakes, cumin powder, coriander powder, and a pinch of salt. Pour this mixture into the pan and stir well to coat the vegetables.

  6. Return the cooked fish pieces to the pan and gently toss them in the sauce. Reduce the heat to low and let the curry simmer for about 5-7 minutes, allowing the flavors to meld together.

  7. Taste the curry and adjust the seasoning if needed. If you prefer a thicker sauce, you can mix a little cornstarch with water and add it to the curry. Cook for an additional minute or two until the sauce thickens.

  8. Once the curry is ready, remove it from the heat and garnish with fresh cilantro leaves.

  9. Serve the deviled sweet and sour fish curry hot with steamed rice or naan bread.
