Here's a recipe for a soft and moist eggless chocolate cake:
Ingredients:
- 1 and 1/2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1/3 cup vegetable oil
- 1 cup milk (dairy or non-dairy)
- 1 teaspoon vanilla extract
- 1 tablespoon white vinegar
For the chocolate ganache (optional):
- 1/2 cup heavy cream (or coconut cream for a vegan option)
- 1 cup semi-sweet chocolate chips
Instructions:
Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan or line it with parchment paper.
In a mixing bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
In another large mixing bowl, combine the granulated sugar and vegetable oil. Mix well until the sugar is well incorporated into the oil.
Add the milk and vanilla extract to the sugar-oil mixture. Stir until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing well after each addition. Mix until you have a smooth batter.
Add the white vinegar to the batter and stir gently. The vinegar will react with the baking soda, helping the cake rise.
