Ingredients: For the dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon oil
  • Water as needed

For the filling:

  • 2 cups cooked and shredded chicken or paneer (Indian cottage cheese) for a vegetarian option
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 tomatoes, thinly sliced
  • 2 green chilies, chopped (optional)
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon chaat masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Oil or butter for cooking
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

For the mint chutney:

  • 1 cup fresh mint leaves
  • 1/2 cup fresh coriander leaves
  • 1 green chili
  • 1 tablespoon lemon juice
  • Salt to taste
  • Water as needed

Instructions:

  1. In a large bowl, combine the all-purpose flour, salt, and oil for the dough. Gradually add water and knead until a smooth and elastic dough is formed. Cover and let it rest for 30 minutes.
  2. In the meantime, prepare the mint chutney. Blend the mint leaves, coriander leaves, green chili, lemon juice, salt, and a little water in a blender or food processor until smooth. Adjust the consistency by adding more water if needed. Set aside.
  3. Heat oil or butter in a pan over medium heat. Add sliced onions and cook until they turn translucent.
  4. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
  5. Add sliced bell peppers and cook for a few minutes until they soften.
  6. Add turmeric powder, cumin powder, red chili powder, chaat masala, and salt. Mix well.
  7. Add the cooked and shredded chicken or paneer to the pan. Stir-fry for a few minutes to combine all the flavors. Remove from heat and set aside.
  8. Divide the dough into small balls and roll them out into thin discs (like chapatis or tortillas).
  9. Heat a griddle or non-stick pan over medium heat. Place one rolled-out disc on the pan and cook on both sides until light brown spots appear. Remove from heat and set aside. Repeat with the remaining dough.
  10. To assemble the Frankie, place a cooked disc on a clean surface. Spread a spoonful of mint chutney over the disc.
  11. Place a portion of the prepared filling in the center of the disc. Top it with sliced tomatoes and chopped green chilies if desired.
  12. Sprinkle some fresh coriander leaves on top. Squeeze a little lemon juice over the filling.
  13. Roll the disc tightly to form a wrap, tucking in the sides as you go.
  14. Repeat with the remaining discs and filling to make more Frankies.
  15. Serve the Frankies hot as a delicious and satisfying street food snack.
