 Certainly! Gatte ki Sabzi is a famous traditional dish from the state of Rajasthan, India. It is a curry made with gram flour (besan) dumplings cooked in a flavorful yogurt-based gravy. Here's a recipe to prepare Gatte ki Sabzi:




Ingredients:

For Gatte (Gram flour dumplings):

  • 1 cup gram flour (besan)
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon carom seeds (ajwain)
  • Salt to taste
  • 2 tablespoons oil
  • Water (as needed)

For Gravy:

  • 1 cup yogurt (whisked)
  • 2 tablespoons gram flour (besan)
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons ghee or oil
  • 1 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • 2 dried red chilies
  • 1 bay leaf
  • 1 cinnamon stick
  • 2-3 green cardamom pods
  • 4-5 cloves
  • 1 tablespoon kasuri methi (dried fenugreek leaves)
  • Fresh coriander leaves for garnishing

Instructions:

  1. In a mixing bowl, combine the gram flour, turmeric powder, red chili powder, coriander powder, carom seeds, salt, and oil for the gatte. Mix well.

  2. Gradually add water to the mixture and knead it into a stiff dough. Divide the dough into small portions and shape them into cylindrical or round dumplings (gatte).

  3. Boil water in a saucepan and add the gatte to it. Cook for about 12-15 minutes or until the gatte float to the surface. Drain the gatte and set them aside.

  4. In another mixing bowl, whisk the yogurt and gram flour together to form a smooth paste. Add ginger paste, garlic paste, turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well to make the gravy.

  5. Heat ghee or oil in a deep pan or kadhai over medium heat. Add cumin seeds, asafoetida, dried red chilies, bay leaf, cinnamon stick, green cardamom pods, and cloves. Saute for a few seconds until the spices release their aroma.

  6. Reduce the heat to low and pour the prepared yogurt and gram flour mixture into the pan. Stir well to combine.

  7. Cook the gravy on low heat, stirring continuously, until it thickens and the raw smell of gram flour disappears. This will take about 10-12 minutes.

  8. Add the cooked gatte to the gravy and mix gently to coat them with the sauce. Let it simmer for another 5-7 minutes.

  9. Crush the kasuri methi between your palms and sprinkle it over the curry. Stir gently to incorporate the flavors.

  10. Garnish the Gatte ki Sabzi with fresh coriander leaves.
