Here's a step-by-step guide to making Gujia:
Start by preparing the dough. In a mixing bowl, combine the all-purpose flour and ghee. Rub the ghee into the flour using your fingertips until it resembles a breadcrumb-like texture.
Gradually add water, a little at a time, and knead the dough to form a smooth and firm consistency. Cover the dough with a damp cloth and let it rest for about 30 minutes.
While the dough is resting, prepare the filling. In a separate bowl, mix together the grated khoya, powdered sugar, chopped nuts, raisins, and cardamom powder. Ensure that the filling is well combined and has a uniform texture.
After the resting time, divide the dough into small lemon-sized portions. Take one portion at a time and roll it into a small circular disc, approximately 4-5 inches in diameter.
Place a tablespoon of the prepared filling in the center of the rolled dough disc. Fold the disc over to form a half-moon shape and seal the edges by pressing them firmly together. You can also use a gujia mold to shape and seal the edges.
Repeat the process with the remaining dough and filling to make multiple gujias.
Heat oil or ghee in a deep frying pan or kadai over medium heat for deep frying. Once the oil is hot, carefully slide in the gujias, a few at a time, and fry them until they turn golden brown and crispy. Flip them occasionally to ensure even frying. This process should take around 8-10 minutes.
Remove the fried gujias from the oil using a slotted spoon and drain off any excess oil. Place them on a paper towel to remove additional oil.
