Hara Masala Kebabs Recipe

Here's a recipe for Hara Masala Kebabs, a flavorful and vibrant variation of kebabs made with a blend of fresh herbs and spices:

Ingredients:

  • 500 grams minced meat (mutton or chicken)
  • 1 cup fresh coriander leaves, chopped
  • 1/2 cup fresh mint leaves, chopped
  • 2 green chilies, chopped
  • 1 medium-sized onion, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons gram flour (besan)
  • 2 tablespoons oil
  • Lemon wedges and mint chutney for serving (optional)

Instructions:

  1. In a blender or food processor, add fresh coriander leaves, fresh mint leaves, and green chilies. Blend them into a fine paste. Set aside.

  2. In a mixing bowl, combine the minced meat, finely chopped onion, ginger-garlic paste, cumin powder, coriander powder, garam masala, turmeric powder, red chili powder, salt, and the freshly prepared herb paste. Mix everything well until all the ingredients are evenly incorporated.

  3. Add gram flour (besan) to the mixture and mix again. The besan helps to bind the kebabs and adds a slight nutty flavor.

  4. Cover the bowl and refrigerate the mixture for about 30 minutes to allow the flavors to meld together and the mixture to firm up.

  5. Preheat the grill or preheat the oven to 200°C (400°F) if you're using an oven for cooking the kebabs.

  6. Take a small portion of the meat mixture and shape it into a flat kebab patty or cylindrical shape.

  7. If using a grill, brush the kebabs with oil and place them on the preheated grill. Cook the kebabs, turning occasionally, until they are cooked through and have a charred exterior. This usually takes around 10-15 minutes, depending on the thickness of the kebabs.

  8. If using an oven, line a baking tray with aluminum foil and place the kebabs on it. Brush the kebabs with oil and bake them in the preheated oven for about 15-20 minutes, or until they are cooked through and browned.

  9. Once the kebabs are cooked, remove them from the grill or oven and let them cool slightly.

  10. Serve the Hara Masala Kebabs hot with lemon wedges and mint chutney if desired.

Hara Masala Kebabs are bursting with fresh flavors from the herbs and spices, making them a delightful addition to any meal. Enjoy their vibrant green color and aromatic taste!
