Kadai Mushroom Recipe

Ingredients:

  • 500 grams mushrooms, sliced
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 green chilies, slit
  • 1 capsicum, sliced
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon kadai masala powder (available in stores)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala powder
  • 1/4 cup fresh coriander leaves, chopped
  • 2 tablespoons oil
  • Salt to taste

Instructions:

  1. Heat oil in a kadai or a deep pan over medium heat.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and sauté for a minute until the raw smell goes away.
  4. Add chopped tomatoes and cook until they become soft and mushy.
  5. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for a couple of minutes.
  6. Add sliced mushrooms and mix everything together. Cook for about 5-7 minutes until the mushrooms are slightly tender.
  7. Add the slit green chilies and sliced capsicum. Stir fry for a few minutes until the capsicum is cooked but still crunchy.
  8. Add the kadai masala powder and garam masala powder. Mix well to coat the mushrooms and vegetables evenly with the spices.
  9. Cook for another 2-3 minutes, allowing the flavors to blend together.
  10. Finally, garnish with chopped fresh coriander leaves and remove from heat.
  11. Serve hot with roti, naan, or rice.
