Ingredients:
- 500 grams prawns, cleaned and deveined
- 1 cup grated coconut
- 1 medium onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon fenugreek seeds
- 2 sprigs curry leaves
- 2 tablespoons coconut oil
- Salt to taste
- Water as needed
For Tempering:
- 1 teaspoon mustard seeds
- 2 dried red chilies
- 1 sprig curry leaves
Instructions:
- In a blender, grind the grated coconut along with a little water to make a smooth paste. Set aside.
- Heat coconut oil in a deep pan or a kadai over medium heat.
- Add fenugreek seeds to the hot oil and let them splutter.
- Add chopped onions and green chilies to the pan and sauté until the onions turn golden brown.
- Add ginger-garlic paste and sauté for another minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they turn soft and mushy.
- Now, add the red chili powder, turmeric powder, and coriander powder to the pan. Mix well and cook for a minute.
- Add the prawns to the pan and stir-fry for a few minutes until they turn pink and start to curl up.
- Pour the ground coconut paste into the pan and mix it with the prawns.
- Add water as needed to adjust the consistency of the curry. Add salt to taste and mix well.
- Bring the curry to a boil, then reduce the heat to low and simmer for about 10-15 minutes until the flavors meld together and the prawns are cooked through.
- In a separate small pan, heat a tablespoon of coconut oil for tempering. Add mustard seeds and let them splutter. Then add dried red chilies and curry leaves. Stir for a few seconds until the curry leaves turn crisp.
- Pour the tempering over the prepared prawn curry and mix gently.
- Garnish with fresh curry leaves.
- Serve the Kerala Prawn Curry hot with steamed rice or appam, a traditional Kerala bread.
