Laal Maas

 Laal Maas is a traditional Rajasthani dish from India, known for its spicy and flavorful taste. It is a mutton curry prepared with a rich combination of spices. Here's a recipe to prepare Laal Maas:



Ingredients:

  • 500 grams mutton (preferably bone-in)
  • 3-4 tablespoons vegetable oil
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 2 tablespoons ginger-garlic paste
  • 2 tablespoons red chili powder (adjust according to your spice preference)
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 2-3 dried red chilies
  • 1 tablespoon dried coriander seeds
  • 1 tablespoon yogurt
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil in a large pan or pressure cooker. Add dried red chilies and coriander seeds, and sauté for a minute until fragrant.

  2. Add chopped onions and cook until they turn golden brown.

  3. Add ginger-garlic paste and sauté for another couple of minutes.

  4. Add the mutton pieces to the pan and cook on high heat until they are browned on all sides.

  5. Reduce the heat to medium and add the tomato puree. Cook for a few minutes until the oil starts to separate from the masala.

  6. In a small bowl, whisk yogurt with red chili powder, coriander powder, turmeric powder, and garam masala. Add this mixture to the pan and mix well with the mutton.

  7. Season with salt and mix everything together. If using a pressure cooker, add a little water (about 1/4 cup). Close the lid and pressure cook for about 15-20 minutes or until the mutton is tender. If using a regular pan, add water as needed and simmer until the mutton is cooked and tender.

  8. Once the mutton is cooked, check the consistency of the curry. If it is too thick, add a little water and simmer for a few more minutes.

  9. Garnish with fresh coriander leaves and serve hot with rice or roti.
