Ingredients:
- > 2 cups cooked rice (preferably cooled or leftover rice)
- > 2 tablespoons oil
- > 1 teaspoon mustard seeds
- > 1 teaspoon split urad dal (skinned black lentils)
- > 1 teaspoon chana dal (split Bengal gram)
- > 1/4 teaspoon asafoetida (hing)
- > 10-12 curry leaves
- > 2 green chilies, slit lengthwise (adjust according to spice preference)
- > 1/4 cup roasted peanuts
- > 2 tablespoons grated coconut (optional)
- > Juice of 1 lemon (adjust according to taste)
- > Salt to taste
- > Fresh coriander leaves for garnish
Instructions:
- 1. Heat oil in a large pan or kadai over medium heat.
- 2. Add mustard seeds and let them splutter.
- 3. Add the split urad dal, chana dal, and asafoetida. Sauté until the dals turn golden brown.
- 4. Add curry leaves and slit green chilies. Sauté for a minute until fragrant.
- 5. Add roasted peanuts and sauté for another minute.
- 6. Reduce the heat to low and add the cooked rice to the pan. Gently mix everything together.
- 7. Squeeze the lemon juice over the rice, ensuring the seeds are removed. Mix well to coat the rice with the lemon juice.
- 8. Add salt to taste and continue mixing until the rice is evenly seasoned.
- 9. If using grated coconut, add it to the rice and mix gently.
- 10. Cook the rice on low heat for a few more minutes, stirring occasionally, to allow the flavors to blend together.
- 11. Turn off the heat and garnish the lemon rice with fresh coriander leaves.
