Ingredients:

  • > 2 cups cooked rice (preferably cooled or leftover rice)
  • > 2 tablespoons oil
  • > 1 teaspoon mustard seeds
  • > 1 teaspoon split urad dal (skinned black lentils)
  • > 1 teaspoon chana dal (split Bengal gram)
  • > 1/4 teaspoon asafoetida (hing)
  • > 10-12 curry leaves
  • > 2 green chilies, slit lengthwise (adjust according to spice preference)
  • > 1/4 cup roasted peanuts
  • > 2 tablespoons grated coconut (optional)
  • > Juice of 1 lemon (adjust according to taste)
  • > Salt to taste
  • > Fresh coriander leaves for garnish

Instructions:

  1. 1. Heat oil in a large pan or kadai over medium heat.

  2. 2. Add mustard seeds and let them splutter.

  3. 3. Add the split urad dal, chana dal, and asafoetida. Sauté until the dals turn golden brown.

  4. 4. Add curry leaves and slit green chilies. Sauté for a minute until fragrant.

  5. 5. Add roasted peanuts and sauté for another minute.

  6. 6. Reduce the heat to low and add the cooked rice to the pan. Gently mix everything together.

  7. 7. Squeeze the lemon juice over the rice, ensuring the seeds are removed. Mix well to coat the rice with the lemon juice.

  8. 8. Add salt to taste and continue mixing until the rice is evenly seasoned.

  9. 9. If using grated coconut, add it to the rice and mix gently.

  10. 10. Cook the rice on low heat for a few more minutes, stirring occasionally, to allow the flavors to blend together.

  11. 11. Turn off the heat and garnish the lemon rice with fresh coriander leaves.

  12. 12. Serve the Lemon Rice hot or at room temperature as a main dish or a side dish. It can be accompanied by yogurt, pickle, or papad for a complete meal.
