Mawa Kachori

 Mawa Kachori is a popular sweet dish from Rajasthan, India. It consists of a crispy fried pastry filled with a sweet and rich mixture of mawa (khoya), nuts, and aromatic spices. Here's a recipe to prepare Mawa Kachori:



Ingredients:

For the dough:

  • 1 cup all-purpose flour (maida)
  • 2 tablespoons ghee (clarified butter)
  • A pinch of salt
  • Water, as needed

For the filling:

  • 1 cup mawa (khoya)
  • ¼ cup powdered sugar (adjust according to taste)
  • 2 tablespoons chopped nuts (cashews, almonds, pistachios)
  • ½ teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • Oil or ghee for frying

For the sugar syrup:

  • 1 cup sugar
  • ½ cup water
  • A few drops of rose water (optional)

Instructions:

  1. In a mixing bowl, combine the all-purpose flour, ghee, and a pinch of salt. Mix well until the flour resembles breadcrumbs. Gradually add water and knead to form a smooth and firm dough. Cover the dough with a damp cloth and let it rest for 15-20 minutes.

  2. Meanwhile, prepare the filling. In a pan, heat the mawa (khoya) on low heat, stirring continuously until it turns slightly golden and releases a nutty aroma. Remove from heat and let it cool.

  3. Once the mawa has cooled down, add powdered sugar, chopped nuts, cardamom powder, and saffron strands (if using). Mix well to combine all the ingredients.

  4. Now, divide the dough into equal-sized balls. Take one ball and roll it out into a small disc, approximately 3-4 inches in diameter.

  5. Place a spoonful of the mawa filling in the center of the rolled-out dough disc. Gather the edges of the disc to form a pouch, sealing the filling inside. Gently press the stuffed dough ball to flatten it slightly.

  6. Repeat the process with the remaining dough balls and filling.

  7. Heat oil or ghee in a deep pan or kadai for frying. Once the oil is hot, carefully slide in the stuffed dough balls, a few at a time. Fry them on medium heat until they turn golden brown and crispy. Make sure to fry them evenly on all sides. Remove the fried kachoris and drain them on a paper towel to remove excess oil.

  8. In a separate pan, prepare the sugar syrup. Combine sugar and water in the pan and heat over medium heat until the sugar dissolves completely. Simmer for a few more minutes until the syrup slightly thickens. Add a few drops of rose water for flavor, if desired.

  9. Dip the fried kachoris in the sugar syrup, ensuring they are coated well. Remove them from the syrup and place them on a wire rack or plate to cool.

  10. Mawa Kachoris are now ready to be served. They can be enjoyed warm or at room temperature. These sweet kachoris make a delightful treat for special occasions or festivals.

Note: The cooking time may vary depending on the size of the kachoris and the heat of the oil, so keep an eye on them while frying to avoid burning.
