Ingredients:
- 500 grams mutton/lamb, cut into pieces
- 1 cup yogurt, whisked
- 1 tablespoon ghee (clarified butter) or vegetable oil
- 2 onions, finely chopped
- 2 teaspoons ginger-garlic paste
- 1 teaspoon red chili powder (adjust according to your spice preference)
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/4 teaspoon saffron strands, soaked in 2 tablespoons warm milk
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
Heat ghee or oil in a deep pan or pressure cooker. Add the chopped onions and cook until they turn golden brown.
Add ginger-garlic paste to the pan and sauté for a minute until fragrant.
Add the mutton/lamb pieces to the pan and cook on high heat until they are browned on all sides.
Reduce the heat to medium and add red chili powder, turmeric powder, coriander powder, and salt. Mix well to coat the meat with the spices.
Add the whisked yogurt to the pan and mix it with the meat. Cook for a few minutes until the yogurt is well incorporated and starts to release its moisture.
If using a pressure cooker, add a little water (about 1/4 cup). Close the lid and pressure cook for about 15-20 minutes or until the mutton is tender. If using a regular pan, add water as needed and simmer until the mutton is cooked and tender.
Once the mutton is cooked, add garam masala and soaked saffron strands along with the milk. Mix well and cook for another 5 minutes to allow the flavors to blend together.
Garnish with fresh coriander leaves.
Serve hot with roti, naan, or rice.
